About Me

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com does not sell any products, and is 100% advertiser supported.

It's hard to say what could have caused you to feel bad after going gluten-free, but the most likely culprit would be getting some gluten contamination (do you eat out in restaurants--this is a common source of contamination), or gluten withdrawals, which most celiacs get to some degree after giving up gluten.   10. I agree, and would only add that all manufacturers have quality control cleanings between each run on their machinery, and if things are made using shared equipment must include this on their packaging, even if the risk of actual contamination is very small.

  13. Good question, and I must assume that they have some cleaning process for them which would remove that, although I cannot speak for the company. This is the only reply I got from them, and only they can make this gluten-free claim about their products.
